Now for some food.

Here’s what I’ve been cooking:

 

Breakfast

The only thing that beats a Full English is a Full English with an Italian sausage.

Chicken and Sweet Potato Stew

Hot Tip: Use a bit of baking paper to steam broccoli in the same pot as the stew.

‍ ‍

Creamy Chicken and Leek Pasta

When life gives you leftover supermarket roast chicken, turn it into cheesy, leeky, fettuccine goodness.

‍ ‍

Sausage, Lentil and Potato Casserole

Garnished with fresh basil that I planted !

with Balsamic-Braised Fennel, Wedges and Tartare

To try this balsamic braised fennel at home: Slice some onions and cut the fennel into thick wedges. Heat a little oil in a pan then plop in the onions and sauté for a few minutes. Make space for the fennel wedges and cook until slightly charred on each side. Then add a splash of water, a good drizzle of balsamic and put the lid on. Turn down the heat and cook until soft and caramelised!

For the tartare: Mix mayo, lemon juice, olive oil, crushed garlic, minced capers and the hairy fennel bits.

Carrot and Sausage Soup (with burnt toast)

Delicious and nutritious. Don’t know what else to say.

‍ ‍

Zucchini, Lemon and Blue Cheese Spaghetti (served with steamed salmon)

Cut your zucchini into coins, sprinkle with salt and sandwich between paper towel to draw out the moisture. Set aside and cook your pasta. While the pasta is cooking, heat some olive oil in a pan and shallow fry the zucchini. Then add some garlic, capers, the cooked pasta, a splash of pasta water, a good squeeze of lemon and a couple knobs of blue cheese (or whatever cheese you like). Stir until silky.

Serve as is or top with flakes of steamed fish. Season with some salt, lots of pepper, and more lemonnnn.
